Chemex: How to Brew

1. Boil a pitcher of water, then let it sit for 30 seconds.

2. Weigh 50g of coffee beans. I like a 1:17 ratio.

3. Grind your beans so that they are about as course as sand.

4. Rinse your paper filter and the Chemex with some water. This preheats the Chemex while removing any papery taste from the filter. Discard the water.

5. Add your grounds to the Chemex and place it on a scale. Make sure to zero it out.

6. Wet the coffee by pouring about 100g of water. This helps the coffee bloom for better flavor extraction.

7. Pour your coffee in pulses so that the height in the filter remains constant. Continue pouring for about 3 minutes until your weight reaches 850g. Your coffee should take about another minute to finish dripping.

8. Enjoy your finished coffee! Remove the filter and pour yourself a cup full of flavor!
